Tonight I am sharing a recipe created by my sister for those gut challenged friends. This can be cooked on the stove top or popped into the slow cooker on a cool winter’s day. There’s something so comforting about coming home to the aroma of a curry and a nice warming dinner.
For those of you who don’t know, my sister Rebecca is an incredible cook and has been helping me develop some gut friendly flavoursome recipes to share with my clients. This SIBO Friendly Chicken Curry is one of her many creations. Bec has cheffed in some of Brisbane’s top restaurants but is currently based in Sydney so I don’t get to enjoy her meals as often. However, whenever we do head down south it is such a treat as the boys and I make sure we place our orders for the week with her lasagna being a favourite with my boys.
What does SIBO stand for?
Small intestinal bacterial overgrowth, a condition where bacteria that normally grows in the large intestine, makes its way up into the small intestine. As a result, when those bacteria feed off certain foods we eat such as those containing high FODMAPs (e.g. onion, garlic), they produce a lot of gas which can be very painful and uncomfortable.
As you know, garlic and onion are a staple in many dishes, particularly curries, so a lot of SIBO recipes can be quite….well…boring. I hope you enjoy this one.⠀
